Winemaking is made traditionally in cement and temperature-controlled stainless steel vats.
The vatting period is of 20 days on average with technical assistance of a consultant oenologist.

LALANDE DE POMEROL : 80.000 liters
BORDEAUX: 12.000 liters

Some of these wines are kept for 16-18 months in thanks with quarterly racking.
The other part of the production is aged in oak barrels (one and two years old) for 16 to 18 months.

The château “CASTEL VIAUD” markets about 45.000 bottles of his traditional wine and 6.000 bottles of his oak barrels wine.
It also markets 5.000 bottles of the vintage EYMARD de CASTEL VIAUD (BORDEAUX).
Bag-in-box and plastic container are also sold at the château (LALANDE DE POMEROL and BORDEAUX).
The rest of the production is a blended wine with another name.
